Spinach and Mushroom Lasagne In A Slow Cooker

Spinach and mushroom lasagne

Ingredients 

400g Fresh Spinach 350g mushrooms 2 garlic cloves,crushed cheese sauce lasagne sheets 1 jar tomato pasta sauce
Grated Cheese 250g
Handful Parsley

Method

Step 1 -  First Blanch 400g fresh spinach in small pan.

Step 2 -  fry mushrooms in another pan

Step 3- Once Spinach and mushrooms are fully cooked mix together in a pan add 1 crushed garlic clove .

step 4-Season with a pinch of pepper and dash of parsley 

step 5-Make up your cheese sauce and add to the spinach and mushrooms

Step 6-make your first layer of lasagne sheets at the bottom of your slow pot ,Pour a quarter of the mixture into your slow cooker 

step 7-on the next layer add half a jar of pasta sauce seasoned with the last garlic , pepper and parsley and a handful of grated cheese

step 8- Repeat step 6 till all your cheese sauce mixture has been used

25 minutes before due to finish add a top layer of cheese onto the top of your lasagne 

Set slow cooker on high for 3 1/2 hour's

Slow Cooker

 Chilli Con Carne

Slow cooked chilli con carnie

Ingredients 

500g Mince Beef
1 Large onion , chopped
2 garlic cloves crushed
1Tin Kidney beans (optional you could get the chilli kick kidney beans)
Colman's Chilli con carne mix 
Pinch of salt & pepper
150ml water
fresh chopped parsley
2 tsp paprika
1tin chopped tomatoes
1 tsp hot chilli powder (optional)
Sour cream (to serve)
Tortilla chips(serve)

Method

step1-Add the mince to the frying pan until starting to brown add the onions and cook up mince has slightly crisped .
step 2-Tip the mince into the slow cooker and turn to low heat
step 3-Add the kidney beans , tomatoes , salt & pepper.
step4-mix the Coleman's with the 150mls water add your chilli powder, into the jug and mix then add to slow cooker.
step 5-Add extra water to make it come up to half way up to the mixture then add the lid .

Cook on low for 4-5 hours or 2-3 on high then serve with tortilla chips and a dollop of sour cream on top of the chilli.

Chicken Chasseur In the Slow Cooker

Ingredients

1 sachet Colman’s Chicken Chasseur Seasoning  Mix4 skinless chicken portions2 medium onions, sliced115g button mushrooms, sliced1 tbsp tomato puree425ml cold water2 Carrots chopped

Method

 Step 1 - Place chopped up onions , chicken , sliced mushrooms , carrots all in the slow cooker
step 2- Blend the contents of Colman's sachet with the tomato puree and the water and to to the slow cooker add extra water if needed make sure chicken is completely covered in the mix.

Leave in slow cooker between 4 - 6 hours on high heat , serve with mash & green beans.

Pumpkin Soup

Ingredients

1 Large pumpkin
2Carrots
1 medium potato
1 onion
1/2 tsp ground cumin
1/2 tsp nutmeg
1tsp ginger
2 tablespoons chicken stock powder
2 cups boiling water
salt and pepper 
1/2 cup cream 

Method

step 1 - Trim skin off pumpkin and cut in even pieces
step 2 - Peel potato and carrots into even sized pieces , dice onion .
step 3- place all veg into the slow cooker
step4 - place your stock and spices into a jug and fill with 1 cup of water and mix add to slow cooker.
step 5- Cook on low for 4 hours  or high for 2.
step 6- pour into electric mixer and season with salt and pepper blend & add cream then serve .
